LIFE IS LIKE A BOX OF CHOCOLATES....OR NOT!

If you follow this blog you know I volunteer for Alzheimer's Idaho (local grassroots organization). Last night was their monthly support group meeting and I make their dessert.  With Valentine's Day occurring before their next meeting I thought I would go with a Valentine theme.  A box of chocolates that are really mini cupcakes.
 The box is just three shiny paper hearts and some red craft paper 
Cut 1" strips of paper to use as the sides of your "box."
 
 For the "top" of the box (will be turned over so you won't see the inside) just glue (I used hot glue) the strips around the heart (come in about 1/4" or so) and trim the end so a perfect heart is formed.
 To make the bottom of the "box" I glued two of the heart together, wrong sides together. The cupcakes will be in this part so you need the double thickness of the two hearts for stability. Once again, glue the paper strips around the heart.  Since this will be seen I took a red sharpie and went around the top of the paper as when it is cut white will show.  I then hot glued a little ribbon across the top and glued on a little bow.
 Made some chocolate sour cream mini cupcakes.
 Decorate the top of the "candy" with different candies.  I also took marshmallows and cut them in half and dipped in chocolate for some of the cupcakes and then took a little frosting and decorated their tops.
 I added a little folded menu card and they were served with some Neapolitan ice cream.

Recipes:

Chocolate Sour Cream Cupcakes
 Ingredients:

1 (18 1/4 ounce) package devil's food cake mix
1 (4 ounce) box instant chocolate pudding mix
1 cup sour cream
1/2 cup water
1/2 cup vegetable oil
4 large eggs

Directions:

1 Place the cake mix, pudding mix, sour cream, water, oil, and eggs in a large mixing bowl.
2 Blend with an electric mixer on low speed for 1 minute.
3 Stop and scrape down the sides of the bowl.
4 On medium low speed, continue to blend for 2-3 minutes more.
5 The batter will be very thick and should look well combined.
6 Pour batter into cupcake papers
7 Bake for 12-15 minutes

Chocolate Sour Cream Frosting

Ingredients:

  • 1 cup semisweet chocolate chips
  • 1/4 cup butter
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 2 1/2 to 2 3/4 cups sifted confectioners' sugar

Preparation:

Melt chocolate chips with butter in top of double boiler over hot water. Remove from hot water; stir in sour cream, vanilla, and salt. Slowly beat in confectioners' sugar until desired spreading consistency is reached. Makes enough chocolate sour cream frosting for a tube or bundt cake or 2-layer cake or lots and lots of mini cupcakes.
