I have my granddaughter this weekend at at six she is a good little baker's helper and is very patient in the kitchen.  We were on track this afternoon to make a batch of chocolate chip cookies for her to take home tomorrow.  As luck would have it I had a call just before we started baking - a friend in need of a little pick-me-up. So I decided to double the recipe and have a box for Belle to take home and one for the friend.

I really like this recipe, it is just a straight forward chocolate chip cookie recipe and I like the fact that it states that you can use self-rising flour as I always have King Arthur self-rising flour around and I love the fact that I consistently get a good cookie with this flour.

We decided to try and make it special for both her family and my friend.

1 cup plus 2T AP flour - if using self-rising omit the baking powder & salt
1/2t salt
1/2t baking soda
1/2 cup (1stick) butter, a little soft, but still cold
1/2 cup packed dark brown sugar
1/4 cup granulated sugar
1 large egg
1t vanilla extract
6oz semi-sweet chocolate chips or chunks

In a large bowl whisk together flour, salt and baking soda, set aside.

In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and both sugars until smooth and creamy,  Using a spatula scrape down the side of bowl; add egg and beat until well combined.  Mixture should be light and fluffy.  Add vanilla and beat just incorporate, about 5 seconds.

Add half the flour mixture and beat until just combined, about 15 seconds.  Add remaining flour mixture and beat until just incorporated.  Gently fold in chocolate chips.

Bake 375 for 10-12 minutes, depending on how crisp you like the cookies

Yield:  Approximately 2 dozen medium cookies

Started with some food gift boxes, tied them up with beautiful silver-white windowpane ribbon and made a tag with our monogram to make this a special gift.
